Ingredients

4-5 lb. beef brisket (fat cap on)

1/4 cup of Worcestershire Sauce

1/2 cup of cold coffee

1/4 cup of apple cider vinegar

6 cloves of garlic, diced

1 onion, diced

1-2 jalapeño peppers (for those that want heat, seeded if you want mild)

2 Tbs. kosher or sea salt

2 Tbs. black pepper

2 Tbs. cayenne pepper
Directions
- Preheat oven to 250 degrees Fahrenheit.
- Allow brisket to approach room temperature
- In a small bowl combine salt, black pepper, and cayenne pepper. Rub this mixture over entire brisket--apply especially to the fat cap. As the fat renders it will carry the seasoning throughout the brisket).
- Place the brisket fat-side up in a roasting pan that can be covered with a lid (foil also works!).
- Blend the diced onion, diced garlic, and jalapeño (if you choose to include it) and spread evenly over the seasoned fat cap.
- In a mixing bowl combine soy sauce, cold coffee, Worcestershire sauce, and vinegar. Pour this mixture around the roast, but try not to disturb the seasoning blend on the fat cap.
- Cover with lid or foil and bake for 5-6 hours or until fork tender.
- Remove brisket from pan, cover with foil (shiny side down!) and allow the roast to rest for 20 minutes.
- Slice across the muscle grain, serve and enjoy!
