Ingredients

2 lbs. Beef, Pork, or Lamb Stew Meat (even chopped chicken thighs work well!)

Canola Oil (Olive, Peanut, or Avocado oil can be used)

2 Tsp. Lemon Grass Paste or (2 whole stalks Lemon Grass, pounded lightly with knife handle to release flavor)

1 Tsp. Grated Ginger or Ginger Paste (1/2 Tsps Ground Ginger works too!)

4 cloves Garlic, diced

2 Tbs. Fish Sauce (Soy Sauce for the faint of heart)

1/2 Onion, chopped

2 Carrots, peeled and chopped bite-size

3 Potatoes, peeled and chopped bite-size

1 can of your favorite Lager beer

2 cans Beef Broth

1 cup Rice

2 cups Water

1/4 Tsp. Salt
Directions
- In a large skillet with oil sear stew meat over medium-high heat until thoroughly browned (this adds great flavor).
- Remove from heat and place in a large sauce pan at medium heat.
- Add ginger, lemon grass, garlic, fish sauce, onion, carrots, potatoes, lager beer, and beef broth.
- Cover and bring to a boil, reduce to medium-low heat and simmer for 3 hours, remember that you can add water as needed if too much evaporates.
- This can also be a 1 hour meal in your Instapot/ pressure cooker if you have one.
- In the last hour of the cook, place rice, water, and salt in a separate pot.
- Cover and bring to a boil.
- Reduce to medium-low heat and simmer until water is entirely absorbed (usually about 20 minutes). Keep covered and remove from heat.
- Serve rice in bowls, ladle stew meat, veggies, and broth over the rice and enjoy!
